Sample Recipe - Vegetarian Chili

2 cups dry kidney beans (500 ml)*
12 cups water (3 L)
1.5 cups chopped onions (375 ml)
4 garlic cloves crushed
2 tbsp olive oil (30 ml)
1 cup each - chopped carrots, celery and green pepper (250 ml)
28 oz can tomatoes (796 ml)
1 tsp salt (5 ml)
1/2 tsp pepper (2 ml)
1.5 tsp cumin powder (7 ml)
1 tsp basil (5 ml)
1.5 tsp chili powder or more to taste (7 ml)
.25 tsp cayenne pepper (1 ml)
7 oz can tomato paste (189 ml)
  1. In a large saucepan, soak** the dry kidney beans overnight in enough water to cover. Drain, rinse well, then cover with water again
    and cook until the beans are soft, about 1.5 to 2 hours.
  2. In another pot, saute the onions and garlic in olive oil for about 5 minutes. Add the vegetables, including the tomatoes, and the spices.
    Simmer until the vegetables are tender.
  3. Add tomato paste and kidney beans. Continue to heat on the stove top, or place in a casserole and
    bake at 300F (150C) until ready to serve.

Serves 4 - 6

Optional Serve with a bowl of grated Cheddar cheese to sprinkle on the chili and with French bread. Delicious!

*You can substitute 2 - 19 oz (540 ml) cans kidney beans and omit instruction #1.

**A faster soaking method is to cover the beans with cold water (3 cups or 750 ml for every cup (250 ml) of beans) and bring to a boil.
Boil for 2 minues and remove from heat. Cover & let stand for 1 hour.
Drain, rinse & proceed with the 2nd half of Instruction #1.
