To make hot tea:
Bring freshly drawn cold water to a rolling boil.
Place 1 tsp of tea for each cup into the teapot. Pour boiling water
over tea & let steep 3 - 7 minutes (the longer the stepping time the stronger
the tea). Add milk & sugar to taste.
To make Iced Tea
Place 6 tsp of tea into a heat resistant pitcher.
Pour 1 1/4 cups freshly boiled water over the tea. Steep for 5 minutes.
Quarter fill a serving pitcher with cold water. Pour the tea into
pitcher straining the leaves. Add ice & top up with cold water. Garnish &
sweeten to taste. Makes 1 quart.
